

I am ex-chef an have worked at corporate restaurants. (Say what you will about corporate "chefs" but I was a Dawg and it sustained a high cost of living). I do pride myself by creating amazing foods without recipes.
At one point in my career I was a Sous at TFK.
My favorite thing todo was creating custom items with the restaurants ingredients for anyone's meals.
This pizza consisted of:
A sourdough crust.
Basil vinaigrette (basil, white balsmic, garlic, olive oil, S&P)
Whipped lemon ricotta
Blistered cherry tomatoes (blistered in the pizza oven before)
Italian chicken sausage
Garnished with arugula tossed with lemon and olive oil
The only restaurant created item was the dough.
Yes I know corporate isn't real, but that's not the point. I liked the structure and job security.
The server said it was one of the best thing's he's ever tasted.
