Spaghetti with clams, white wine & lemon zest 🤍
A rich, aromatic sauce made from clam juices, olive oil and wine — the pasta cooks directly in it, soaking up all the flavour
Ingredients:
• 400 g spaghetti
• 1 kg clams
• 2–3 garlic cloves
• ½–1 chilli
• zest of 1 lemon
• 3–4 tbsp olive oil
• parsley
• 100 ml dry white wine
• salt
Method:
Rinse the clams well in cold water.
Cook garlic and chilli in olive oil.
Add clams and wine, cover and cook until they open.
Remove clams, keep the sauce.
Add spaghetti and a little water, cooking it in the sauce, stirring.
Return clams, add lemon zest, parsley and olive oil.
