Today’s special: Mediterranean Chicken Focaccia Plate — one of those simple ideas that turned into a massive hit during service.

We started with toasted focaccia, layered with homemade aioli, a fresh chopped salsa (peppers, onion, cucumber, capers, olives & sun-dried tomatoes), roasted tomatoes, and shredded chicken thigh seasoned with oregano, basil and paprika. Finished with a drizzle of sun-dried tomato oil and parmesan.

Served with crispy griddled potatoes on the side.

This was one of those dishes that just worked — it got great customer feedback and sold really well.

  6. At 36:19 she should pay more if she wants more servings, at 3.75 it is already a good price imo. Indication that you cannot have all customers that knows how a business runs. It's not just the food they pay for, it's the rent, labor, and utilities that are included smh.

  7. Try Indonesian food, especially rendang and other Indonesian food. Lots of traditional spices. Chicken satay. Goat satay Tongseng. Other foods.

  8. Love all the comraderie with all of the workers and you and the canteen staff. Always hearing the pleases and thank you's are so nice to hear. Food always looks absolutely scrumptious.
