  1. Tomato paste does not have a raw flavour because it is not raw. It has had the shit cooked out of it in order to go from tomatoes to paste. Itโ€™s literally reduced tomatoes. The reason you add it and briefly cooked it is the same as for everything else – to develop and layer the flavour.

  2. Now I feel judged by chives whenever I pass them up in grocery stores. I need to put the work in to get good. I love my garlic chives because they're not as pretentious and make me feel bad about myself.
