Ingredients
* 1 cup Parmesan Cheese (grated)ย 
* 4 clovesย Garlic
* 1 cupย Walnuts (chopped)ย 
* ยฝ tspย Thyme (dried)ย 
* 2 โ€“ 3 lbsย Butternut Squashย 
* 4 tbspย Butter
* 1 โ€“ 2 slicesย Bread (salted rosemary, garlic)ย 
* ยฝ tspย Rosemary (dried)ย 
* ยฝ – 1 tspย Fresh Ground Black Pepper
* ยฝ – 1 tspย Pink Himalayan Salt
* Vito & Joeโ€™s Extra Virgin Olive Oil

How to Prepare
1. Preheat the oven to 400ยฐF.
2. Prepare butternut squash: peel, remove seeds, and cut into 1-inch cubes.
3. Toss squash cubes with olive oil, herbs, and garlic.
4. Add ยพ of chopped walnuts and spread mixture on a lined cookie sheet.
5. Roast in the oven for 20 minutes.
6. Drizzle with excess oil from the parchment paper.
7. Reduce the oven temperature to 325ยฐF.
8. Add butter, grated parmesan, and torn bread pieces to the roasted squash. Stir.
9. Transfer to a serving dish and top with remaining walnuts and more parmesan.
10. Bake for 15-20 minutes.
11. Enjoy!
