1 chicken, cut up in 8 pieces
3 garlic cloves, halved
4-5 sprigs rosemary, 2 inches long
TT, Freshly ground black pepper,
2 tbs extra virgin olive oil
Marinate the chicken with all the ingredients in an air tight container overnight
2/3 cup yellow onion, chopped
2/3 cup dry white wine
1 oz dried porcini mushrooms, reconstituted
1 can Italian peeled tomatoes
1 cup chicken broth
TT sea salt
In a large skillet lightly sear chicken on both sided, deglaze with white wine, reduce, season with salt and add mushrooms, tomatoes and chicken broth. Bring to boil and cook over medium heat for about one hour until liquid has reduced, chicken is thoroughly cooked and flavors are concentrated.
