I'm trying to add my recipe in a pizza making app and it's asking for the % hydration. Is that the weight of the water divided by the weight of the flour ?
First, Google bakers percentages and read up on that. Bakers percentage is always based on the flour being 100%. So if your flour is 100% and youre using 1000 grams, if you wanted 60% hydration, you would do 600 grams. You do that math and its the same for all other ingredients like salt, oil or any additional ingredients or preferments.
