  1. Starch from the pasta carmelizingof tomatoe sauce blends in with the oil & it becomes gravy with lots of flavor. Its not as much rendered fat as it looks because it less dense oils due to the beef is also being infused with water during the grinding process. What is rendered during cooking (80/20) has high nutrient value than alot of the oils that are being used with/added to dressings & veggies. Notice finished dish has No fat, oil or grease seperating glistening on top of the sauce or around pan edges.
