Ingredients (Serves 3–4)
Pasta
• Penne or similar pasta – 150 g | 1½ US cups | 1¼ UK cups
• Salt for pasta water – 5 g | 1 tsp
Meat & Aromatics
• Olive oil – 15 ml | 1 tbsp
• Butter – 14 g | 1 tbsp
• Ground beef – 500 g
• Onion – 2 medium (about 250 g), chopped
• Garlic – 3 cloves (about 9 g), minced
• Bell pepper – 1 large (about 150 g), chopped
Sauce Base
• Passata (tomato purée) – 120 ml | 8 tbsp
• Tomato paste – 30 g | 2 tbsp
• Beef broth – 240 ml | 1 US cup | 0.83 UK cup
• Cream (heavy/double) – 200 ml | 13 tbsp + 1 tsp | 0.85 US cup | 0.70 UK cup
Flavour Boosters
• Worcestershire sauce – 2.5 ml | ½ tsp
• White wine – 60 ml | 4 tbsp | 0.25 US cup | 0.21 UK cup
(or 1 tsp balsamic vinegar instead)
Seasonings
• Salt – 5 g | 1 tsp
• Black pepper – ½ tsp
• Chili flakes – ⅓ tsp

• Sweet paprika – ½ tsp
Cheese & Finish
• Parmesan cheese – 40 g | about ½ US cup grated
• Mozzarella 80 g | about 1 US cup shredded
• Fresh parsley – 2 tbsp chopped | 6 tsp
Optional (recommended)
• Reserved pasta water – 60 ml | 4 tbsp | 0.25 US cup | 0.21 UK cup

  7. Hi Rik. This does look delicious & am wanting to cook. Question 🙂 what do you mean by "this is beef broth with gravy granules mixed with?" Do you mean you put powdered gravy in with beef stock/broth? Not sure thank you

  8. I have a “thing” with my garlic where if I want it tasting a bit stronger that day I’ll just fling it on top of the mince and veg close to the end of frying everything, so it just sweats a bit.

  12. Love these quick recipes of yours Rik, as they make great dishes to reheat at work, but with this one, it should be ok to add both cheeses when reheating in a microwave? Work won't let us have a oven in case we hurt ourselves 🤔
