  1. If you'd like the recipes from our date-night in โ€” the carpaccio, the olive oil cake, and the charred vegetables with prosciutto breadcrumbs โ€” you can download it here:

And if Umbria feels like a place youโ€™d like to experience one dayโ€ฆ there are just a few rooms left for September.Together, we'll share all sorts of meals (all made with good ingredients), fantastic wine (including the one featured!), and long evenings at the table.
    Details are here: https://www.theelliotthomestead.com/chevitagetaway

    Thank you for being here!

  2. Even though I can appreciate the simplicity of this meal, raw meat carries higher risks of foodborne illness from bacteria and parasites, especially for children and pregnant women.

Alcohol is a Group 1 carcinogen, classified by the WHO and IARC in the same risk category as tobacco and asbestos, causing at least seven types of cancer. It damages DNA via its metabolite, acetaldehyde, and increases hormone levels. No amount of consumption is considered risk-free.ย

Organic wine is considered just as carcinogenic as regular wine because the primary carcinogenic agent in all wine is the ethanol (alcohol) itself, which is present in both types. When the body breaks down ethanol (alcohol), it produces a toxic chemical called acetaldehyde, which is a known human carcinogen. This process damages DNA and prevents cells from repairing themselves, leading to an increased risk of cancer.

  3. "Thereโ€™s something truly special about the simplicity of what you create. Simple cooking isnโ€™t just about the ingredientsโ€”itโ€™s about care, love, and the joy of turning something ordinary into something meaningful. Your work reminds people that the beauty of food comes from the heart, not from complexity, and that even the simplest dishes can bring warmth, comfort, and happiness. Watching your process inspires others to slow down, appreciate the little things, and find joy in creating something with intention and love. Keep sharing this gift, because simplicity, when done with passion, can touch hearts in the most profound way."

  4. You had me until the raw beef, lol! The rest looks amazing, I would give the beef a light sautรฉ in butter and give it a go!

  5. Made my mouth water, my German mother made Tartar every friday with raw chopped beef, raw egg yolk, raw onions and parsley on a crusty roll, we never got sick, I'm 71 and i would still eat it but now i don't have a trusted source anymore like you do. Enjoy it even though you have people going on and on about all the reasons they wouldn't eat it. โค
