I wonder if you can add ricotta or if it would be overdoing it.
Nice recipe, the onion, celery, and carrot mix is called mirepoix {meer-pwah) and it's the moisture of those vegetables that releases the brown bits from the pan. And the holy trinity is a Cajun / Louisiana creole vegetable, which is onions, green bell pepper, and celery.

Do you have a written recipe for this by chance? This looks amazing. Love the béchamel sauce in it and the plus side is it dues not have ricotta, which I’m not a big fan of.
I'm sure this tastes great but I really love my lasagna receipe and don't think I could change it to a simpler one like this.

I have to try bechamel again in my lasagna maybe use more cause it was too dry. It's the moisture that deglazes the pan. That looks bomb. I love using ricotta nostalgic for me too my mom did as well!!❤
