Welcome to the 4th episode of my Illustrated Recipes series. Today’s Illustrated Recipe is a favorite from my childhood: White Asparagus Risotto.
White asaparagus is currently in season in the northern hemisphere – but not for long so better jump on it quick. It has a beautiful slightly nutty flavor with a hint of sweetness and adds a wonderfully creamy texture to the dish.
Its mildness balances out the richness of the risotto, creating a harmonious balance. What should I draw next for my illustrated cookbook?
