I grew up eating this all the time for breakfast. I would make it with my grandmother. I never thought twice about it until I was out to dinner and someone ordered it. I didn’t know what Carbonara was called lol.
It is a quick and simple meal. Although we never used cream, only cheese, pasta water and egg yolk.

I’ve never had carbonara before and I really do want to try it. However, for religious reasons, I am vegetarian. Would it still be called carbonara if it was made vegetarian? What would you recommend I use instead of pork cheek?
