almond flour -231g

powder sugar -153g

white sugar -192g

water -30 g

egg whites -69g

egg whites-69 g

1/2 teaspoon or Pinch of meringue powder

•sift powder sugar and almond then add the 1rst amount of egg whites and mix together

•Mix sugar and water and heat up to 235f

•While the sugar is cooking whip up the 2nd part of egg whites and meringue powder until foamy

•then add in sugar mixture when it reaches 235f on a medium high speed

•once it’s a medium peak add in color

•then combine and fold meringue with almond paste mixture

Bake at 300 for 14 minutes 7 on each side
