regular salt (non iodized) and sugar 3% by weight of meat
curing salt, Instacure 1 or 2 or Morton’s tender quick. 2.5%. All available on Amazon or online.

Toasted and ground Coriander seed
Fennel seed, crushed, cracked, ground. (optional)
Juniper berries, crushed, pulverized.
Black pepper, coarse ground/cracked.
Indian long pepper, crushed, cracked or ground. (optional)
Hot chili flakes/Calabrian chili flakes to taste.
Gochugaru (Korean ground chili) optional
Smoked paprika. optional.
Garlic powder to taste (I use quite a bit).
Bay leaves crushed and pulverized to taste.
