In the kitchen with Karen

Flour, Eggs and Yeast

For the ingredients you will need

4-5 chicken breast cut as seen in video and pounded thin about 1/4 inch thick

1 cup of flour for dredging the chicken salt and pepper in the flour about 2 tsp of salt and 1 tsp of pepper or to taste

1/4 cup of olive oil fir frying
5 table spoons of butter 2 are to add to the olive oil for frying

after you dredge each piece of chicken you then fry a few at a time over medium heat in a fry pan on stove for about 3 minutes each side. set aside each on a plate or something so you can move onto making the sauce

You can clean out fry pan before moving onto the sauce

For the sauce

drizzle of olive oil and 3 tablespoons of butter melt butter

add 1/3 cup of dry white wine you enjoy turn heat up to medium high heat
add 1/4 cup of lemon juice fresh if you can
simmer for 2-3 minutes on almost high heat reducing a little

add 1 cup of chicken stock and a few table spoons of capers that you have rinsed off

simmer for 3-4 minutes

you can add the chicken back to the pan with sauce to finish cooking on a medium heat
OR
You can do as I did if your pan isn’t big enough

I put the chicken in a casserole dish
poured the sauce over
put in a preheated 350 F oven for about 15 minutes until chicken was cooked
internal temperature of 165

I severed over spaghetti and roasted red peppers and added slices of lemon to the dish

the roasted peppers and the lemon were yummy with this Piccata

thank you all so much
