The first time I created this recipe, I was absolutely blown away by its sheer magic. Many of my best creations in the kitchen are the ones, where I end up using local ingredients to recreate classic dishes. This pasta is my take on the classic spaghetti Aglio Olio. Introducing coriander to the garlic-infused olive oil gives this Italian classic a fresh dimension with a desi twist. Listening to bird songs while cooking Alfresco, at one of the most scenic locations, has to be my best experience of Swan kitchen so far.

500 gm spaghetti
1/2 cup chopped Garlic
250gms prawns (optional)
1 cup crushed Cashew nuts/nuts of your choice
1 cup chopped Bell peppers
1 cup chopped Coriander
2-3 tbsp lemon juice
2 tsp chilli flakes
1/2 cup grated parmesan cheese
