Welcome to our kitchen! 🍕🍝

For the Base

* Cookies 🍪 — 400g
* Melted butter 🧈 — 200g

For the Cream

* Mascarpone 🤍 — 275g
* Ricotta 🤍 — 350g
* Heavy cream — 200g
* Powdered sugar — 60g
* Vanilla
* Raspberries ❤️ — 200g
* Pistachio cream 💚 — as needed

Method

Start by preparing the base: combine the crushed cookies with the melted butter. Press the mixture into the bottom of a cake pan lined with parchment paper and place it in the freezer for 20 minutes.

Meanwhile, prepare the cream by combining all the cream ingredients. Mix well and spread the filling over the cookie base. Alternate the first layer with fresh raspberries.

Let it rest in the freezer for 30 minutes.

Then pour the pistachio cream, thinned with 2 tablespoons of coconut oil, over the top. Place it back in the freezer for another 45–50 minutes, or refrigerate for 2 hours.
