ICYMI, we had a very exciting week at The Kitchn: Our brand-new first-ever magazine hit newsstands across the country. The first issue, What’s for Dinner?, is an incredible resource for everyone who has to figure out what to cook for themselves or their family day after day. I just got my copy and the issue looks even more gorgeous IRL — and it’s so useful! Cooking from something tangible on my kitchen counter — a magazine, a cookbook — is still my most preferred mode (sorry, internet!). There’s something about having a physical copy of the recipe right in front of you, a dogeared page splattered with sauce stains from the last time you made it, that feels nostalgic … like the way it should be.
In addition to some of our most popular and beloved recipes, every issue of our quarterly print magazine will feature about a dozen brand-new ones, which are exclusive to subscribers online. They’re just beginning to publish on our website, so I wanted to give y’all a preview. The Kitchn editors worked hard to make them special, but not fussy. I can’t wait to try them all.

Viet-Cajun cuisine is quintessential Houston, where Rachel, our senior culinary producer, grew up. Borrowing the Cajun flavors and crawfish boils of the Gulf and combining them with aromatic Vietnamese ingredients like lemongrass, ginger, fish sauce, and sugar, the seafood there tastes like nothing you’ve experienced before. Here, Rachel combines all the bold flavors of a crawfish boil without any of the hard work or mess.

3. Jennifer Garner’s Signature Fall Salad

The “Five Star Weekend” actress and America’s favorite home cook has this recipe saved on her Notes app. Her family made it for Thanksgiving several years ago and loved it so much it’s now in her regular rotation. I tested it to make sure it was perfect for the magazine and can confirm — it’s rotation worthy!

4. Butternut Squash Pasta Alla Vodka

I’m a sucker for vodka sauce, so when we needed someone to test this recipe, I eagerly raised my hand. Blending roasted squash as the base of the sauce gives it the most luxe, velvety texture. This is the pasta of fall.

5. Cacio e Uova

This 25-minute Italian pasta looks simple — but there’s serious depth from glossy eggs, garlic oil, and plenty of Pecorino and Parm. It’s like carbonara’s no-bacon cousin.

7. Tuscan Beef Stew

This is the stew you’ll find me making many Sundays this fall. The rustic dish actually dates back to the 15th century. It gets its bold flavor from a whole bottle (!) of red wine and lots of black pepper.

Pork shoulder doesn’t have a season for me — I love cooking it year-round — but the apple cider, Dijon, and thyme turn this into fall in a pot. Cannot wait for the first chilly day to smell this simmering on the stove.
