This is the creamy zucchini pasta you need to make this summer. It comes together in under 20 minutes, uses just a few ingredients, and I think your family is going to love it. If you’ve been looking for easy one-pot pasta recipes, this is the video for you.

Growing up, pasta e zucchine was always a simple bowl of pasta and zucchini with a sprinkle of cheese. Today, I’m showing you how to turn it into a creamy pasta e zucchine that’s even better. I filmed this while spending the summer in Southern Italy, where zucchini is everywhere. It’s an easy weeknight pasta that’s perfect when your garden is overflowing or you just want a quick dinner.

If you enjoyed my Pasta and Peas recipe, I think you’re going to love this one too. It’s basically the summer version. I joked with my wife and told her this was Stanley Tucci’s grandmother’s zucchini pasta recipe. She said most people wouldn’t get the joke… but you might. 😂

INGREDIENTS:
500g (1 lb) ditalini or tubetti pasta
500g (1 lb) zucchini, cubed
1 yellow onion, diced
Extra virgin olive oil
4½ cups water (add more if needed)
Fresh basil
Freshly grated Parmigiano Reggiano
Salt
Black pepper

DIRECTIONS:
1. Heat a generous drizzle of olive oil in a large skillet over medium heat. Add the onion and fresh basil and cook until softened.
2. Add the zucchini, season with salt and black pepper, and cook for a few minutes.
3. Pour in 4½ cups of water and simmer for about 5 minutes.
4. Blend about half of the zucchini mixture until smooth, then return it to the pan.
5. Add the pasta and cook, stirring often, until al dente. Add more water if needed as it cooks.
6. Turn off the heat and stir in a generous amount of freshly grated Parmigiano Reggiano until creamy.

  1. Wonderful recipe. Looking forward to making it. You have an audience, people look to you for instruction, please use correct grammar. “Me and my wife” – should be “my wife and I”.

  2. Hello Giovanni Italy is so beautiful, I don’t know why my papa would leave to come here to Canada. I’m hoping to go to Tuscany by the end of fall❤ God bless great meal

  3. Love your pea version so definitely going to try this. Eggplant would be good too this way.

  4. I've seen a lot of others using only the stem from back during the oil seasoning phase. You should try it!

  5. Man that looks awesome. Simple without a ton of other flavors competing with the zucchini! I love your cooking and admit it's making me change the way I cook! Perfect timing as I do have a bunch of zuc's coming in! 👍

  6. This pasta ia killer!! I recognized the place, Puglia, because of the architectural visual amd that rock wall in the back. Way to go Giovanni. Congrats. I have the other pasta like this one but with peas. Peas will be first and then this one. I love zucchini. Thank you. Enjoy. Kisses to the fur babies and Puglia. ❤🎉

  7. When I have too much zucchini at home (it is the case right now) I usually make "zarangollo" (it's a Spanish dish, check it out) or "pisto" (you could say it's Spanish ciambotta), now I've another option! Thanks Giovanni, cheers everyone!

  8. Maybe just me, but zucchini and garlic are besties. I’ve made similar several times but usually have an entire head of chopped garlic in there.

  9. My wife has made this recipe two times already. I’m not thrilled about vegetables and even I am nuts over this dish. 😋😋😋

  10. Love the vegetarian pastas, Giovanni: keep ‘em coming. And you’re right – we did follow you initially from the pasta & peas. What breed is your dog . . . she looks like a Maltese🇲🇹?

  11. Your meals are always so special and look so yummy. Thank you. Keep cooking keep sharing your recipes 🙏🏻🙏🏻😀😊👍😁😃

  12. Lovely texture to this. Another one for the cook book, ill see how i get on with this on rotation, it was very easy to cook for a pasta and peas bro, great to have more variety ! thanks again you rule Giovanni.

  14. Like a lot of your viewers I started with the pasta with peas recipe, which I tried and my family loved. It looks like that method is also applied here (and for the chickpea pasta, and maybe others I haven't seen yet) — cook veggies in water, take about half out to blend, then put back in the water, then the pasta, and once the sauce cooks down and the pasta is cooked, mix in a mountain of cheese. I wonder if that method would work for almost any veggie (and my apologies if you've already done these) — maybe eggplant, tomatoes, leeks, cabbage, beans, maybe even mushrooms…? Thanks and looking forward to seeing more!

  15. Ok had this for dinner as we had abundance of zucchini. I didn't have cilantro so I used fresh parsley and had to use a different noodle but it came out fantastic!!! So easy. Oh and I didn't toss I mix with spoon – worked fine and kept the room clean. LOL Really enjoyed thanks again

  16. Delicious and I will definitely try this one! My favourite Italian chef has just become even more appealing with his gorgeous pets part of the scene! Thank you!

  17. Wow! That is SO much easier than spaghetti alla Nerano! I don’t fry much of anything so this is a great zucchini application!

  18. I’m literally going to try this one right now! The only similar pasta I have though is small macaroni…what is that pasta shape you’re using called?

  19. Zucchini is such a versatile vegetable and can be used in many dishes. This recipe looks delicious, especially with the little bit of cheese at the end! 😂🤤

  20. glad you have sponsorship but you can just get a roaming plan from tmibile or att or whoever is your US carrier. But again. Sponsorship away. You deserve it. I'd buy pans you recommend!!

  21. Will you be taking the cat home with you? 🤞 we’ve made several of your recipes and have loved them all! I was the one who said I know Stanley he dated my sister! You will be doing a collab with him eventually I just know it👍

  22. I love zucchini and am always happy to see a new way of cooking it. Thanks for the recipe! BTW, your four legged friends are adorable 🙂
