To make a fire for pizzas, start a fire over the area where you will be baking. Let it burn for a couple of hours and build up a nice bed of coals. Keep adding wood during the 2 hour heat up. It doesn’t need to a roaring fire, but you do want flames to heat the interior. When the dome bricks above the fire no longer have black soot, your oven has reached baking temperature. Push the fire, coals, and ash off to the side and brush off the baking spot for your pizzas. Keep a fire with active flames as you bake. Any well seasoned hardwood will work. You’ll need about a wheelbarrow of wood for a pizza party assuming you bake pizzas through the party.ย
