SAFFRON ORZO WITH SPINACH AND FETA RECIPE
Serves: 5
INGREDIENTS:
— 1/8 tsp Saffron (to make saffron solution)
— 1 tbs Olive Oil
— 1 tsp Garlic, minced
— Pinch Red pepper flakes
— 1 cup Uncooked orzo pasta
— 1 1/2 cups Chicken broth
— 1/2 cup Dry white wine
— 1/2 tsp Salt
— 2 cups Fresh spinach, chopped fine
— 1/3 cup Feta cheese, crumbled
DIRECTIONS:
— Add 1/8 tsp of ground saffron to 2 tbs of hot water and let it infuse for at least 5 minutes.
— Sauté garlic and pepper flakes in oil in a large saucepan for 30 seconds over medium heat.
— Add orzo, stirring 2 minutes to coat with oil and prevent sticking.
— Stir in chicken broth, wine, and salt.
— Cover, reduce heat to low, and cook 9 minutes.
— Stir in saffron solution and cook for 1 minute.
— After 1 minute (for a total of 10 minutes), turn off the heat and add 1/2 the feta and the spinach to the hot pasta. Stir to soften the feta and wilt the spinach.
— When serving, spread the rest of the crumbled feta on the orzo.
SERVING SUGGESTION:
— Serve with your favorite grilled or broiled meats (example: Our broiled salmon) and a small salad.
I will be right over❤
this was a great little recipe that was super easy to follow and added so much flavour to my orzo which I was before making in a very bland pasta way. thank u. would love a few more easy to follow vegetarian recipes. 😉 I have done your crunchy rice which has always been absolutely fantastic. but since I don't eat meat some of the others are hard to follow. although I have embraced your Iranian breakfast style 🙂 after watching that great video where you shared your breakfast in some gorgeous nature spots. well done.
