This is what Italians actually eat in the summer. Ciambotta is a rustic southern Italian vegetable medley, you take whatever vegetables are in the garden and you make this. Every family has their own version and this is the way my family made it. It tastes like summer in southern Italy and once you try it you’ll be making it all summer long.

Whether you serve it as a healthy Mediterranean side dish alongside grilled meats or fish, or just on its own with some bread, it never disappoints. This easy one pan vegan and vegetarian Italian recipe is Italy’s answer to ratatouille and it might be better.

Ingredients:
1 eggplant, cubed
2 zucchini, cubed
2 Yukon Gold potatoes, cubed
Red, yellow, and orange peppers, cubed
1/2 lb cherry or grape tomatoes, halved
1 cup tomato passata
3 garlic cloves smashed
Olive oil
Salt and pepper
Fresh basil

Directions:
1. Heat a generous amount of olive oil in a large pan. Add the potatoes and cook on high heat for 5 minutes until crispy.
2. Add the eggplant, garlic, zucchini, and peppers. Cook for another 5 minutes on high heat.
3. Add the tomatoes, passata, salt, pepper, and fresh basil. Let it simmer for 5 to 10 minutes until everything is tender and the flavors come together.
4. Serve with bread or alongside grilled meats and fish.

  1. When my Italian husband and I became vegan everyone asked us what can you eat? Italian food is so easy to veganise. Just add chickpeas instead of dead animals and you’re set.

  2. This is quite similar to the French ratatouille. I should think this would be perfect with some fish, sardines, anchovies.
    So far as the potatoes are concerned you might want to try a waxy variety such as charlotte, anya or jersey potatoes. Jersey potatoes have a short season in early June but are so worth getting

  3. I like to add some Borlotti beans to this. With those, the bread, and all the over veggies you have a complete meal which you don't really even need to pair with anything

  4. I am from southern Russia, city of Astrakhan and this dish is also a prominent part of my childhood! I guess, there's just something about taking whatever grows in your garden and tossing it into the pan

  11. Change out the passata and basil for just some tomato paste and a splash of balsamico and add capers (a lot of them!) and you get sicilian Caponata which can also be enjoyed with bread or pasta and is equally delicious.
