Instructions
Step 1: Prep & Marinate the Broccoli
Place the whole head of broccoli upside down into a large bowl.
Pour warm milk over it until the florets are mostly submerged. Let it marinate for 15 minutes to help tenderize the vegetable.
Remove the broccoli from the milk, shaking off any excess. Finely chop the entire head (florets and tender parts of the stem) until it resembles a fine rice consistency.
Step 2: Mix & Cook the Base
Transfer the chopped broccoli into a clean mixing bowl.
Add the 2 eggs, grated cheese, chili flakes, paprika, salt, pepper, and a small splash of milk. Mix thoroughly until well combined.
Grease a large skillet with a bit of oil or butter over medium-low heat. Pour the broccoli mixture in, smoothing it out with a spoon to create an even, flat round.
Cover with a lid and let it cook undisturbed for 20 minutes until the base is set and the edges look stable.
Step 3: Whipping Up the Garlic Cream Sauce
While the crust is cooking, heat a separate pan over medium heat and melt the butter and olive oil together.
Add the minced garlic and sauté for about 1 minute until fragrant.
Stir in the flour and cook for another minute to remove the raw flour taste.
Slowly whisk in the milk to avoid lumps. Bring to a gentle simmer, then stir in the fresh parsley, Parmesan cheese, and your spices. Stir continuously until the sauce is smooth and thickened. Set aside.
Step 4: Build the Pizza
Carefully flip the broccoli crust over in the skillet (using a large plate to assist makes this easy).
Spread the tomato sauce evenly over the top of the cooked crust.
Layer on the shredded mozzarella, tomato slices, crispy fried bacon pieces, and a pinch of dried oregano.
Pop the lid back on the skillet and cook for an additional 15 minutes on low heat, or until the toppings are completely melted and bubbly.
Step 5: Slice and Serve
Slide the pizza onto a cutting board, slice it into wedges, and serve hot.
Use the warm garlic cream sauce as a rich dipping sauce for each slice.
