Welcome to Around The World – One recipe at a time, this video is a quick demonstration to make the Italian dish, Spaghetti Carbonara.

Ingredients:
500g Spaghetti
150g Guanciale (can use pancetta if you can’t find it)
120g Pecorino Romano (grated)
5 egg yolks
Salt
Pepper
Method:
1) Bring a pot of salted water to a boil. Cook the pasta until al dente
2) Cut the Guanciale into cubes. Place in a cold, dry frying pan and cook over a low heat until crisp and browned, about 4-5 minutes.
3) While this cooks, place the egg yolks into a bowl. Add the cheese and the pepper, and combine with a fork.
4) Once the pasta is cooked, save a cup of pasta water, drain the pasta, then add a splash of pasta water to the guanciale before adding the pasta. Saute on low heat for a few minutes.
5) Remove from the heat, return to the pot and combine remaining pasta water with the egg mixture, before adding to the pasta.
6) Toss the pasta continuously until it is fully coated and glossy.
7) Serve with a little extra Pecorino Romano and pepper to taste.

Gotta admit, using the pasta water with the other ingredients is a new concept for me. What does it do exactly?
