Today I did carbonara for the first time. I use Luciano Monosilio recipe. I think I overdid it with the peper but its still pretty good! I did not find guancialle unfortunatly so I had to use normal bacon

The dish is meant to be very pungent in black pepper, so unless you disliked it, you’re on the right track.
It’s a shame to not have guanciale, but excellent technique with the “wrong” ingredients like that is better than messing up and cooking a “proper” carbonara badly in my opinion.
