Make it feel like Sunday dinners at your Italian Grandma’s house with these old school ITALIAN STUFFED ARTICHOKES 🍋🍃🤌 The twist? These are completely vegan and plant based🍃 You won’t miss the cheese with the savory bread crumb stuffing. I get that not everyone had an Italian grandma, but these are fun to try if you see some beautiful artichokes at the farmers market or grocery store. Eating the tender leaves with the garlic, lemon breadcrumb stuffing is both nostalgic and, and delicious🍋 Enjoy!
Italian Stuffed Artichokes🍃
Ingredients
2 large artichokes
3/4 cup plain breadcrumbs (if using seasoned breadcrumbs, don’t add salt)
zest of 1 small lemon
1 tablespoon lemon juice
2 cloves garlic, minced
3 tablespoons olive oil plus more for drizzling
salt to taste

Directions
Cut the stems off of the artichokes and remove the outer layer of tough leaves. Then with a serrated knife, cut off the top inch or so so that the top of the artichoke is flat. Hit the top part of the artichoke on the cutting board a few times to help open up the leaves. In a bowl, mix the breadcrumbs, lemon zest, lemon juice, garlic and olive oil. Add a little water so it’s not too dry. Season with salt if needed. Stuff the outer leaves with the stuffing, opening up the leaves to fill, and add some stuffing on top. Fill a pot with about 2 inches of water. Place the artichokes in the pot so that they stand up straight. Do not cover the artichokes with water. Drizzle a little olive oil on top and cover with lid. Bring to boil and then reduce heat to a simmer. Simmer for about 45 minutes. Serve warm.
