โTesta Mattaโ sau โCap nebunโ este, pentru italieni, o persoanฤ cu personalitate puternicฤ, un fel de a fi aparte, atitudine pozitivฤ ศi multฤ creativitate. Niciun alt nume n-ar putea sฤ descrie mai bine vinul de top al lui Bibi Graetz – un Supertoscan fฤcut 100% din Sangiovese din vii vechi, รฎn care se combinฤ tradiศia ศi creativitatea, ducรขnd noศiunea de Supertoscan la un alt nivel.
Bibi Graetz este unul dintre cei mai mari oenologi italieni. Personaj enigmatic ศi vulcanic, el a demarat รฎn 2000 un proiect fantastic cฤruia i-a spus โAzienda Agricola Testamattaโ. Apoi, a ajuns rapid รฎntre primii 12 cei mai apreciaศi producฤtori italieni de vinuri de colecศie.
Numele, deloc italian, i se trage de la tatฤl sฤu evreu-elveศian care s-a cฤsฤtorit cu o tรขnฤrฤ norvegianฤ ศi s-au stabilit la Fiesole, lรขngฤ Florenศa, unde au cumpฤrat un frumos castel medieval. Crescรขnd รฎntr-un mediu artistic, printre impresionantele statui metalice create de tatฤl sฤu, Bibi a ales sฤ studieze artele. A fost unul dintre absolvenศii promiศฤtori ai Academiei dellโArte din Florenศa, pentru ca, nevoit fiind, รฎn anii 1990 sฤ se dedice vinului – a avut de ales รฎntre a renunศa la viile vechi care รฎi รฎnconjurau casa din Castello de Vincigliata ศi a deveni producฤtor. A รฎnceput prin a colabora, timp de patru ani, cu oenologul Alberto Antonini ศi s-a impus rapid pe scena vinului toscan, susศinutt fiind de punctajele favorabile primite de la Robert Parker. Apoi, รฎn 2006, Testamatta primea 98 puncte de la Wine Spectator, iar รฎn noiembrie 2008, Fiesole a fost inclus รฎntre zonele producฤtoare de vinuri italiene mari. De atunci, Testamatta a devenit un vin-cult รฎn รฎntreaga lume, iar povestea de succes a lui Bibi Graetz continuฤ.

Testamatta is a region nearby Florence, Italy. The owner of the winery is Bibi Gretz, a well known oenologist.
Before becoming an oenologist, he graduated from architecture and used to be a painter and sculptor.
He fell in love with the vineyards around his house and he started to make wine.
Step by step, he achieved amazing results and decided to become also an oenologist and then he created a winery.
At the moment they own around 50 hectares and the vines are mostly old, as Bibi is in love with this kind of vines, as they create unique flavors.
Now we opened a 100% Sangiovese, product of 2015.
The vinification was made in “open barriques” where they mix the fermented chokecherries 6 – 8 times a day.
We are aerating the wine. It’s the fastest method to aerate it and prepare the glass for the tasting.
After the fermentation, the resulted wine is maturated 24 months in barriques (wood wine barrels).
The grapes have their origins in BIO agriculture, meaning that there were little or insignificant chemical interventions.
That’s why, each year, Testamatta has different flavours and features, as they concentrate more on what the vineyard is offering each year.
We can smell an intense flavour of fruits, some minty and velvety notes. We can also feel some sweet spices.
