He spent several years with the Altamarea Group, working at Michelin-starred Marea and Ai Fiori, where he managed high-revenue service and upheld fine dining standards. His experience also includes openings and leadership roles at Queensyard and Feinstein’s/54 Below.
In Virginia, Miles contributed to restaurant development and operations at Havana 59, focusing on marketing strategy, beverage programs, and team training. With strong expertise in P&L management, staff development, and beverage curation, he brings a practical, business-driven perspective to hospitality.
