Today I’m making one of Rome’s most iconic pasta dishes.
This pasta is simple, but incredibly powerful.
Pasta all’Amatriciana comes from the small town of Amatrice in central Italy.
Before tomatoes arrived in Europe, the original version of this dish was called gricia, made with guanciale and pecorino cheese. When tomatoes were introduced, the dish evolved into Amatriciana — the version we know and love today.
Simple, honest, and full of flavor, it represents the heart of Roman cuisine.
For me, food is not just about taste.
It’s about energy, memories, and emotions.
This dish reminded me why I love cooking so much.

– Guanciale (pork cheek) 100g
– Pecorino Romano cheese
– San Marzano peeled tomatoes 700g
– Dry chili (peperoncino)
– Pasta 250g for 2 people (Traditionally, Amatriciana is made with bucatini), but today I’m using pasta alla chitarra — I just love the texture.)
