
Ingredients: (6 servings)
- 350g pasta
- 500g large sausages, able to remove casing
- 1 large sweet potato, peeled and cut into bite sized pieces
- 2 red bell peppers, diced to 2-3cm
- 1 red or yellow onion, slivered
- 4 garlic cloves, chopped
- 150g baby spinach
- 2 tablespoons olive oil
- 1 teaspoon dried basil
- Salt and black pepper, to taste
- Parmesan cheese, for serving
Steps:
- Preheat oven to 220°C (200°C fan)/425°F
- Add sweet potato cut into bite-sized pieces onto large baking tray
- Add sausage chunks(2-3cm) squeezed out of casing
- Add 1 tablespoon olive oil
- Add ½ teaspoon dried basil
- Season with salt & pepper
- Toss to coat and spread evenly on tray
- Bake for 10 minutes at 220°C (200°C fan)/425°F
- Add red bell pepper to the baking tray
- Add onion
- Add garlic
- Add 1 tablespoon olive oil
- Add ½ teaspoon dried basil
- Mix everything together and spread out on tray
- Bake for another 10 minutes at 220°C (200°C fan)/425°F
- Meanwhile, cook pasta until al dente
- Once pasta is done, transfer to large pan over medium-low heat
- Add the roasted sausage and vegetables to pasta
- Add the baby spinach
- Stir together over medium-low heat until spinach has wilted
- Sprinkle with parmesan to serve
