  1. Buerre monte sauce…..add lemon , white wine cold butter in a lit water …best butter sauce .

  2. It pleased me to see him go so light-handed with the seasoning. Seafood is like a steak; if it's good quality all you really want on it is salt, pepper and maybe garlic or like in his case, a light hand of a seasoning blend (light hand for seafood, steaks require more of a heavy hand)

  3. How much war that whole slab 🥲? Coz I know I'd pay both arms and a leg here for that
