Tried a new mix I concocted using 4 different flours. Did a 24 hr poolish with all trumps, then added in some tipo 1, 00, and a little bit of semolina. Had no flop and had a nice nuttiness. Cooked on a Dough Guy steel in normal home oven. Since I suck at launching and my peel is too small for 16 inch pies, I cooked it on the pan for 3 minutes until dough set a bit and then took it off the pan and went right on the steel.
