Guys a big part of it is the fact that he's using durum wheat. It's a totally different kind of wheat and plant. The Mexican ones are just "regular" processed wheat flour in bread. That's why they're not puffing up

Sodium bicarbonate is baking soda. Its a leavener. So it'll puff that stuff right up…the wheat doesn’t have that property.
