⬇️ How to make black & white “Damascus” ravioli.

📕 Dough:

White dough:

• 100g (3.5 oz) 00 flour
• 86gb(3 oz) water

Black dough:

• 100g (3.5 oz) 00 flour
• 86g (3 oz) water
• 1 tsp activated charcoal powder

Instructions:

1. Make both doughs and let them rest, wrapped, for at least 30 minutes.
2. Layer them together and press into a compact block.
3. Slice into pieces about 5 mm (0.2 in) thick.
4. Place the slices side by side, keeping the pattern aligned.
5. Gently press, then roll out to 1.2 mm (0.05 in) and make your favorite pasta.

🔔 Secret tip: Roll gradually, reducing thickness step by step. If you go too thin too fast, the pattern will distort and lose definition.
