Salad Recreation Series Part Four

Gimme, gimme more of Dimmi Trattoria’s Grilled Calamari Salad. Now we can have it at home and so can you!

Serves: 2-4
Prep time: 10 minutes
Cook time: 2 minutes
Special tools: a sharp knife

Ingredients:
2 cloves garlic, salted and crushed
1/3 red onion, diced
1 large heirloom tomato, diced
3 tablespoons capers, chopped
1 handful fresh basil
3 tablespoons Terra Delyssa extra-virgin olive oil
1 tablespoon fresh lemon juice
4 twists of black pepper
2 handfuls of baby arugula
Calamari, cleaned and scored

Method:
1. In a medium bowl, toss tomatoes, onions, capers and garlic. Add olive oil, lemon juice and basil. Adjust seasoning and let sit.
2. Marinate calamari in extra virgin olive oil and season.
3. Grill calamari at very high heat, score side down for 1 minute, and turn for another minute.
4. Remove and let cool slightly. Go to the plate with arugula, calamari and cover with tomatoes.
5. Serve with a smile.
