ITALIAN STYLE CHILI:
Olive Oil
2 Yellow Onions, chopped large
4-6 Garlic Cloves, chopped
6-8 Scallions, chopped
Salt, to taste
Black Pepper, to taste
1 pound Sweet Italian Sausage, casing removed
1 pound Hot Italian Sausage, casing removed
2 pounds Ground Beef (90/10)
2 teaspoons Paprika or Smoked Paprika
3 teaspoons Dry Oregano
3 teaspoons Cumin, or to taste
1-2 teaspoons Garlic Powder
6 teaspoons Cayenne Pepper, or to taste
1 tablespoon Hot Red Pepper Flakes, or to taste
3 Bell Peppers (multicolor), chopped large
2 Cubanelle Peppers, chopped small
2 Jalapeno Peppers, chopped small
2 – 12 ounce bottles of Peroni Beer, or beer of choice
2 cups Peeled Tomatoes or chopped Fresh Tomatoes (or canned tomatoes)
1 quart Tomato Puree
6-8 Basil Leaves, optional
15 oz canned Red Kidney Beans, drained and rinsed
15 oz canned Cannellini Beans, drained and rinsed
15 oz canned Black Beans, drained and rinsed
15 oz canned Corn, drained and rinsed
Sharp Provolone Cheese, shredded
Fresh basil, chopped for garnish optional
Fresh parsley, chopped for garnish optional

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. It is in the province of Foggia in the Puglia region of southeast Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina enjoys making food for her family in the same old fashion ways as she was taught by her mother and grandmother in Italy, and also new things she has subsequently learned from family and friends in America. She also enjoys gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new…?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera and behind the scenes?
Grandma Gina’s retired son-in-law, Nick, does the filming, editing, production, and channel management. Her daughter, Maria, helps with food preparation, kitchen setup and fan support. Also, Grandma Gina usually has one or two grand-kids in the kitchen to help.

[Music] hello I’m Gina today I am in the kitchen look my friend a long time than me today I’m here because I something special my grandson M to make chili and this one he make all the time I eat make I eat my to I want to he he can teaching me today he teaching me we need all of this we got to make they got show me that’s it he got to show me he show me everybody can watch everybody can make this this is thing my grandson make okay hello I’m Michael uh we’ll be making chili um be teaching you Grandma we have our vegetables here so scallions jalapeno peppers bell peppers cubel Peppers garlic onions uh we have dried hot peppers um you can use uh pre-bought in the store uh hot peppers if you wish um you need a tomato base as well as liquid for chili so we have uh my grandma’s tomato sauce and we’re going to use some Jarred uh Tomatoes as well um um you need beans for chili so we have uh three different colors of beans here uh calini beans kidy beans and black beans uh we’re going to use some corn uh we have a pound of sweet Italian sausage a pound of spicy Italian sausage 2 lounds of ground beef um we have beer here for more liquid volume as well as uh alcohol is going to do us some flavor enhancing of our proteins in the in the chili and uh I like to make my own chili seasoning so we have oregano and cayenne pepper cumin uh paprika garlic powder um you can use uh chili powder you bought in the store if you wish um it’s fine uh salt and pepper and I like to put rice in my chili so we’ll do that too we got a lot of work today yeah you do good you do good Mel now we got to thank you we got to start the The Cook The make something we got to start okay yeah yeah all right all right we’re going to start with the vegetables so onions first the vegetable all right okay what I want to say I I want you to cut the Dan because they making me cry okay I do the paper okay and we do it together okay uh going to like cut up the some of the like the larger bits of onion just so that they’re kind of about the same size but I’m not going to drive myself crazy doing it because it’s all going to like cook down and uh break apart when you’re you know Chili’s going to cook for about at least an hour once you’ve got everything in the pot so uh we got uh we got plenty of time to let things cook I make a gar you make a scar all right we do it together nice Michael yeah we have a nice day today look yeah so very nice out and uh I like cooking and cooking with you Grandma’s cook cuz you got to make a nice I like doing this you got to eat okay all right so all of this part of the scallion is going to go with the onions maybe most of it I’ll save one piece and uh I’ll save the green tops for after when uh I’m done when we’re done and uh we’ll make it look nice and pretty um and maybe the middle parts I’ll mix in how I feel uh if you don’t like scallions or you don’t want to use them or you want to use them all either with your onions or as garnish that’s uh that’s up to you you know it’s your own uh way you want to cook so I’ll throw the next one like [Laughter] this oh gas got [Music] got a lot of scallions so get those there okay uh this is this is spicy these are really spicy this is a more spicy everybody everyone this one those have a taste they’re um they’re not spicy but they’re like they’re very fresh there’s like little T there’s a yeah those are sweet right those are sweet too but they sweet my little different taste different taste yeah and this is very hot I know I want to see what they are this two yeah these are kind of so if you if you like to garnish with these it’s easy cuz or throw them in at the end when you’re cooking uh you can just leave them hole and you can leave the you can leave this with them sliced up you know like this towards the end uh but I like to cook with them I I like to have uh I like fresh spicy peppers and dried uh spicy peppers cuz it kind of the way it Cooks the the heat is nice and even they make more more more uh taste more taste more yeah because these taste they they’ll taste different too besides just being spicy um but it’s nice and it’s a smooth heat smoother heat but since I like to cook with them I don’t like having as much of this in here because we’re gonna we’re going to cook with this because they’re more hard they’re more hard they have more taste and we’ll put them in with the other peppers too so it goes in early so to do that instead how you learn this you learn this by yourself for some like this what you learn well you know I worked um in a kitchen right in school but also just CU I lived off campus for a little bit um I had to cook and uh besides what I learned from you and from mom um you know I just had to figure some stuff out and like um you know cuz I was working in a kitchen so like people I worked with also taught me stuff uh I learned you know um part of this chili recipe I I owe to um some of my co-workers from years ago you know when you want to learn something you keep watch you keep watch alone that’s the problem like me I want to I want to make something I want to different one different one to watch you want you to see make it yeah absolutely and then you you like to cook you like to do something and when you see and you you learn you learn to make that’s good that’s good when you you got cook Fe you know cook you know eat exactly you know cook you know eat you have you have to buy the sandwich in the store when you cook you you eat something fresh and I know what you buy you buy fresh thing you make a nice it’s different taste different taste is for this and cheaper cheaper is Big cheap you you save the money you buy the [Laughter] house that that’s the the people and know it’s a a very hard time but they can they can learn to do something that’s all they help to help a little bit help a little bit uh the seed you do I’m glad you have to do whatever you have to do yes you young I want you to learn more and more and more okay so well you’re still young you’re learning you’re learning chilly today to say I have something new for me I I want to learn to look on my age still I want to learn something more I want to make a eat that’s good you you cook you eat all right hey so the seeds are spicy right and in here too the seeds so you can get rid of them if you don’t want I would normally keep them but you don’t like super spicy food no why you like to eat that one well I mean I would cook with it it would be in the in the chili you could put it together yeah the seeds not the not the white stuff not no okay um when they cook oh but then you get them in your teeth it’s really annoying I think when they cook everything is good anyway make yeah I mean if you you really don’t have to you could just throw them in if you really want to you that’s why we clean you got to clean you don’t have to put that one all right so those are the jalapenos uh you can you know you can experiment with all types of different peppers if you want um I’ve made chili many times with all different kinds of peppers Peppers that made my roommates kind of annoyed cuz the kitchen became a you you couldn’t walk into it anymore because it was too hot uh from the peppers that I was cooking with still delicious um you let’s do these you want to do one no I don’t want to make this no it’s not spicy it’s it’s got the taste it’s a taste I can do myself all right I do this because can I make it out of my finger I I go my eyes I I try so I don’t want to make it out my finger it’s got some uh not a lot just a little bit of stuff in there all right so we’re going to wow this is hot yeah uh I don’t know how spicy these ones are um why do you got it why you got it because oh you eat a lot yeah oh my God my father my I remember when I was little my father make a lot the this and we was kids was too much for the the little kids i e that one my father says good you this make you strong they told me they make you they make you strong you I was my my brother the little one he say too hot say too hot he was to C look at this this e like this you eat like they’re like this they’re a little spicy we can use all three they’re not um I like I like a little bit but not too much try it no no okay so we’re going to keep the seeds and the the Flesh of the pepper this you got to put all all in the all in the thing it’s not very spicy if they were very spicy for you I wouldn’t use the seeds I would just use the flesh do you want a less less spice you no use the seeds mhm the seeds are a m spice yeah yeah they both both parts are spicy so um but these are these aren’t so hot so we’re going to use all of them okay like this oh it’s like the um uh what is it the uh the the pasta Fel with the pasta with with the bread know I know yeah you got food little little taste but not like too much I just have a little taste this one’s nice and dry so it’ll be easy she just kind of going to make a bunch a little pieces really small a really small right and I mean we’ll do this with all of it and then you take it push it together and so long as make them more more make them more more yep and you just keep going keep going so trying to let the camera see without without losing all my little bits of peppers all over the place cuz it’s going to it’s you learn good you use the knife very good they know you learn you learn I had to you know cut up so many of those sometimes when you only got to cut up one two God bless my grand God bless Michael okay so if you have an herb grinder um or you know like those coffee grinders that you you know you save for for spices and whatever works a lot better that’s very small very small look at this nice nice all right we’ve cut up all our vegetables and we’ve rined our beans this is what it looks like and now we will be making our chili seasoning with these spices here uh first we’re going to start with six tpoon of cayenne pepper uh this is will give you more heat but also uh very like specific flavor of the spicy pepper taste that is you you know uh part of chili so it’s two and three four five and six okay oh that was almost all of that nice um uh 3 taspo of oregano two three uh three taspo of cumin uh this is important for chili have you used this before you know what this is oh wow yeah so this is like that this is like that uh this tast is like very they making you wake up yeah yeah um it’s an important flavor in chili so you you kind of can’t make chili without using this is more important the chili yeah even more than the than the spicy even even more so so three teaspoons of cumin [Music] two three yeah well we have a we have we’re making a lot of chili we’re making enough chili for everybody today so paprika we’re doing two teaspoons of paprika uh this gives some some color some smell little bit of taste just to make make it a c taste let’s get a little more on that one so first one was a little skimpy and and so we’re going to use a teaspoon of garlic powder uh we already have a lot of garlic here maybe not a lot of garlic but we’ve got some garlic so we’re not going to use a whole bunch of garlic here little a little power PowerUp okay okay so that’s our spices you make a it up okay yeah so we’re going to yeah is smells spicy right is delicious you smell you smell it’s good it’s a good smell nice I I like so they make you nice they don’t make you sleep they make me wake up yeah it’ll wake you up yeah absolutely okay we can cook now finally we’ve done all the prep work now we got to cook okay Michael you got to show me what to do okay all right we got the flame on medium high we’re going to add some olive oil that looks good right does that look good to you right to little bit just yeah we’re going to put the onions in two three spoon yeah okay so we’re going to put our onions in okay uh do you want to do the stirring spoon oh sorry they got to fry a little bit yeah we’ll let these soften up and uh get all nice and kind of translucent and clear like so um yep yeah a little salt now while we’re waiting a little little by little everything will come here yeah little by little everything come in this SP yep to much thing paper black yep black pepper okay you want to stir that around a little more okay the onions are the onions are ready they’re softened they’re getting translucent why do you make a n uh next we’ll add the garlic and the meat so you don’t want to hold the spoon so throw in our garlic the garlic you want to stir that around we’re going to add the meat as well um oh I make a sausage yeah yeah if you’re working with sausage meat you want to take it out of the casing it’s not too hard you know just stay safe don’t don’t stab yourself or your your cooking partner wouldn’t be wouldn’t be a very good Christmas got to take the skin off yeah all right I’ll take that now let’s throw in the meat we’ll put the sausage in first you want to crush that Up Stir that around okay how’s that coming every mom you want me to do it and you want to put the meat in yeah here we’ll trade you got to put this yeah yeah yeah all this yeah so add the add the ground beef beef yeah ground beef throw it in the pot yeah go ahead put Sal another granny meat yes okay w ah yeah we’re making a lot a lot of chili today oh okay there we go okay really get that all smashed up spread it around okay so while the meat is Browning we’re going to add most of our seasoning just give it a [Music] Grandma stir please [Music] yeah okay that’s almost all of it we’ll save a little bit to add a little later we’re also going to add our dry hot peppers Pap that’s the pap yeah we’ll add the rest of the peppers pepper pepper there we go so now we’re going to add our bell peppers and we’ll let them cook for a bit before we add our other peppers just cuz they’re uh they’re so much bigger uh fleshier peppers and there’s a lot of them go ahead and Grandma yeah we’ll add these in about a minute or two I want to see these cook down a little more just cuz um these are thin right and those are yeah thicker pieces of pepper right all right so our bell peppers have cooked down a little bit they’re they’re getting soft so I’m going to add in our cubel peppers and our jalapenos now and there’s the cubel so we’ll stir these around we’re going to add another scoop of our seasoning some salt and pepper uh the reason why I want to break up adding the seasoning not all at once it’s cuz as the as it Cooks the flavor of the seasonings change so if you spread it out you got a much broader flavor and some black pepper salt and black pepper let’s stir this up okay behind you grab it a spoon I just want a good piece of meat there it tastes like Italian chili I like it all right so uh now that we have all our vegetables in um if you’re lucky if you got some fresh basil you can also add this in you can also save it for garnish you can do both um I’ll just throw in a little bit there I’m going to leave the leaves pretty big like so oh I did not want to put that piece of stem in Stir It Up and here we are also going to add the beer uh the beer will provide some not some the beer will provide a lot of our liquid as well as our tomato sauce but the alcohol in the beer will also um soften up the meat proteins and give us um a richer flavor uh this is beer that I have uh just around my house but you can pick whatever beer you want to use based on uh the flavors you’re working with usually if you’re making chili with beef or pork um I mean it’s up to preference but I would go with a heavier beer this is not a heavier beer but uh I like it so it’s what we’re going to work with um if you’re making like a turkey or a chicken chili you could use a lighter beer um same thing with the beans and we’ll go over that too when we get to that step so we’re just going to let this cook in the beer for about 5 minutes or so and we’ll add Our tomato sauce and then our beans almost again almost we’re almost at the easy part we’re almost that the easy part the bigger part almost to finish all right okay Grandma we’re going to use your peel tomatoes here that’s my PE tomato put over there yeah so uh fresh or your Tomatoes work very well here um you can use fresh one too that’s he said use fresh one you can use fresh tomatoes this one or these peeled Tomatoes it’s it’s a b tomato nice in the store you could buy um like canned crushed tomato uh they have more juice than this does so you could use like a whole can I’m not going to use a this whole jar of tomatoes here but I will use this whole jar of sauce at least one whole jar of sauce for this much chili um yeah uh you just want you just want the real nice good flavor from actual tomatoes and then you’re getting a lot of volume in liquid from the sauce I think that’s that looks like a good amount of tomatoes there if we need more we can change our minds but uh we’ll mix that in and then we’ll add the sauce slowly Okay C of the sauce okay that splatters a little bit so there we go all right let’s stir that around a little bit [Music] let’s get the last bit of that delicious homemade sauce out of there okay this come more delicious because of the fresher salsa tomato everything yeah nice yeah homemade all made all that and we’ll add our beans now as well now what you got the beans uh what I like to do with my beans after you know after I rinse them I’ll crush them up uh a little bit you know smash these a bit but not like very thoroughly cuz smash a little bit well one cuz you’ll lose some if you’re not careful but um you crush them up a little bit they absorb uh some sauce and they get um they thicken up your real nice um this might be a little easier to do while they’re still in the can but you know it’s uh however you would like to make chili that’s up to you that’s uh it’s your prerogative um no no one correct way to make chili um you can you can Spruce it up you can add your own uh take on it it’s beautiful thing about food and cooking so it’s real nice nice okay Crush those up or a potato masher would work pretty well here I think okay so I’m going to add our beans in oh oh yeah I know once was enough I won’t do it again [Music] [Music] Migel [Music] I know B but I don’t know God bless you God bless help you s Miguel a song for St Mich nice things okay okay nice B well uh you know what we’ll add the corn now we don’t have to wait and uh now that we were now that we’ve added all our ingredients this is the best part of chili because now it’s going to cook for about an hour and all you got to do do is you know keep an eye on it stir it every now and again um last thing you want to do is burn your chili that that’d be very sad for all the work you’ve just done nice looking nice right very beautiful mix of colors we’re going to let this cook down wow all the flavors are going to mix together now they got to cook about one hour yeah okay mhm uh you can go longer than an hour if you wish it just becomes um it becomes a game of making sure you have enough liquid left over that’s all um okay so just a 1 hour minimum and then after the one hour we yes M yeah all right so it’s been a little over an hour maybe like 20 20 minutes over and the chili’s done it’s cooked down it’s thicker you can see just uh just kind of the viscosity of it um it’s hot right now it’ll get even thicker as it cools it’s really good the next day after it’s been in the refrigerator for a night um so we’re going to put this in a bowl and we’ll eat yeah you ready that’s good look good the look good all right all right okay we do you do good job hey I watch you I learn nothing think something okay all right all right okay so we are finished it’s time to eat so for some toppings we have uh extra sharp prob Alone um the last of our scallions the green tops of them uh we have basil here we have rice and and some bread you know you got to have starts with your with your uh complete meal here so uh my grandmother likes rice I like rice too with my chili but I’m going to try some you know straight first but you ready give me little bit not too much because it’s the spice of me too much all right okay okay there you go all right Michael oh hold on let’s put cheese on first cheese hey okay thank you Michael thank you you’re welcome it’s big helping for me lot of cheese yeah you want some basil basil one for me okay ready we got to eat yeah all right Michel it’s very nice today today I enjoy with my grandon look at this he make a nice thing I learn
