Italian Cheese Tortellini Pasta Salad



An incredible flavorful dinner, or side dish! Enjoy!
For the pasta salad

I bag uncooked cheese tortellini
1 pint cherry tomatoes, halved
14 oz can artichoke hearts, drained and rough chopped
8 ounces fresh mozzarella cheese pearls
1 lb genoa salami, cut into 1/2 inch cubes
1/2 cup whole kalamata olives
1/2 cup jarred sliced golden pepperoncini, drained
1/2 purple onion, sliced thinly

For the italian dressing

1/2 cup extra virgin olive oil
1/2 red wine vinegar
3 tablespoons freshly grated Parmesan
4 cloves garlic minced
1 tab italian seasoning
1/2 tsp salt and pepper
