Arancini di Carnevale are typical sweets of Le Marche, from the province of Ancona. They are usually prepared during the Carnival period.
Shaped like swivels, Carnival arancini (which have nothing to do with the typical Sicilian ones) are very fragrant and tasty because they are flavored with orange, hence the name of “arancini”. The dough is filled with sugar and grated orange peel before being rolled and deep fried in vegetable oil.
This is our easy peasy version.
INGREDIENTS
For the dough
1 egg
300g of flour
10g of natural yeast
30g of sugar
130g of milk
30g of vegetable oil
For the filling
1 or 2 large oranges
100g of sugar
PREPARATION
Melt the natural yeast in warm milk. Mix the flour with the 30g of sugar. Crack the egg in it and add the vegetable oil. Slowly add the milk and yeast mix. Work the dough with your hand until it becomes homogeneous. Create a ball. Place in a bowl and cover with plastic film. Let the dough rise for at least 2 hours. Roll the dough with a pin to approximately 2-3mm thick. Distribute 100g of sugar all over the surface. Then the zest of the 2 oranges. Roll the dough and cut to form all 1cm wide swivels. Deep fry in olive oil, drain and sugar-coat on both side.
