TRANSLATION

Hi everybody, this is my video-testimony.
Perhaps you have already understood from the title, I speak of vegan and gluten-free nutrition.
For the first time I show my face, yes, this is my channel.

First I want to explain briefly what gluten is.
Gluten is an autoimmune disease that cannot be self-diagnosed.
It is a protein found in some cereals (they must absolutely be eliminated from the diet of a celiac) such as: wheat, spelled, barley, oats, kamut, etc. ; unless they are swallowed, it means that those cereals have been processed in such a way as to eliminate gluten.
The cereals that celiacs can take are quinoa, corn, rice, etc. .

Given the fact that I am both vegan and celiac; I want to bear my testimony. This, to show the most skeptical that one can live well and in good health, eating in a vegetable manner (therefore without causing suffering to any living being), and being celiac (therefore having a chronic pathology).

Next month (August 2019) I will be a vegan for five years, and I have been celiac for about twelve years.
Obviously at the beginning it was not easy, because I too was not very informed on the subject. So I started documenting and reading all the packaging labels, and now it’s not a problem anymore.

We must be very careful about contamination, so a celiac must have his cutlery, his pots: it must all be separated.
Precisely for this reason, there are premises authorized by the celiac association (each city has its own association).
The premises authorized by the association, on the front door have a symbol (each city has its own staff).
The symbol that the restaurant has, indicates that that restaurant or ice cream shop is certified for cooking without gluten. This means that there are two separate kitchens in the room.
Unfortunately, I noticed (in Italy) many places that are not authorized, but still say that they cook without gluten. So there is a risk that if a celiac goes into these rooms it can feel bad, and the place can close.

I also noticed that many say, “But even if you eat a small piece of bread, what does it do to you?” Unfortunately, on this subject there is a lot of ignorance and misinformation. There is no “quantity” that makes you feel bad.

Another thing that people ask, is whether you are so much or not celiac. There is no “much” or “little”, or you are celiac or you are not. I have an exemption, so I am celiac.

With this video I would like to make the skeptics understand that you can eat well and be healthy, while eating in a vegetable, and gluten-free way.
Many people get scared when you tell them you are vegan, worrying that you will die if you do not eat meat; if then, besides being vegan you tell them that you are also celiac, it is a disaster! People look at you like an alien, because joining the two seems impossible.
