Please note: You can use any combination of cheese you like

Ingredients:

1 package manicotti noodles – 14 in a box

Sauce:
24 oz marinara sauce
15 oz diced tomatoes
6 chopped garlic cloves
1 chopped large shallot
1/2 teaspoon salt
1/4 teaspoon red pepper
1/8 teaspoon dried herbs
Chopped fresh basil thyme and parsley
2 tablespoons olive oil for frying

Filling:
12 oz. grated cheese blend
15 oz. ricotta cheese

Topping:
4 oz. Fresh mozzarella cheese
8 oz. Grated mozzarella cheese
2 oz. Grated Parmesan cheese

Preparation:

1. Add 2 tablespoons olive oil to pan, add garlic and shallot
2. Stir in marinara sauce and diced tomatoes
3. Add salt, red pepper and dried herbs
4. Add chopped fresh herbs at the end
5. Soak noodles for 10 minutes in hot water – remove and rinse (caution – delicate!)
6. Roll filling into logs that will fit into noodles; seal from both ends
7. Layer 1/3 sauce into 13 x 9 in. pan
8. Place stuffed noodles onto sauce and top with remaining sauce
9. Add cheese for topping
10. Bake covered with aluminum foil for 25 minutes at 350 degrees
11. Bake uncovered an addition 15 minutes
12. Cool on wire rack for 15-20 minutes before serving
