


I think I finally cracked the code for a homemade 16 inch NYC style pizza. I stretched this as best I could without any light spots, so I'm likely going to need to increase my dough ball by a couple of grams next time to get this to fit the whole 16 inch screen. This has been without a doubt, my best homemade pie since I began this hobby almost 2.5 years ago. My wife got me the Pizza Bible and the recipe I've been fixated on was the Master Dough Recipe, but with a few caveats.
I've found that my sweet spot is 400 degrees for the bake on a screen! I've been very tempted to purchase a Baking Steel, but the under carriage I managed to create is simply incredible. So I think I'm going to stick with this approach.
No flops, no burnt spots, with a balance of firm but slightly chewy dough and a good crust. Everything has been prepped by hand, including the dough (no mixer). I also make my own sauce from scratch.
Any one in socal wanna slice? I've been wanting to see what other people think now that I truly have found my groove with this. Might be asking some neighbors in our apartment complex next.
Oh, and this was the first pie I made with pepperoni and jalapeรฑo and holy moly…wished I tried this years ago! Sorry for the crappy lighting, need to work on taking better food related photos lol You'll be seeing more posts from me!
