I cannot get this to roll out nicely. I’ve measured correctly with a scale I’ve used half semolina and half 00. I needed it correctly. I’ve let it rise. I’ve added just a tiny bit of water, kneaded and then let it rise about three times now and I still can’t get it right! First time I did, it turned out beautifully. Now this! Please can you please tell me what the problem is?

    There is no yeast so nothing to ‘rise’ you are letting it rest. Its hard to tell from the picture if its a hydration issue or its overworked. Try leaving it alone for 30 minutes and coming back to it gently.

    Also youre starting to roll on the widest setting right?

    Looks like you’re not starting at the largest setting to roll it out. You’ve gotta start at the large setting and gradually get smaller after running the dough through the machine three times at least.

    Assuming you’re not just fucking with us –

    Cut that large piece into 4 or so smaller pieces. Roll each into a ball. Flatten with your palm into sort of an oval shape as best you can. Then feed it through on the thickest setting. Fold each end in toward the middle to square up the edges then run it through again. From there pass it through the rollers at progressively thinner settings until you hit your target. Go one notch at a time.

    Try cutting it in smaller pieces. Then press it flat by hand before putting it in the machine. Looks like the dough gets ripped off the big piece instead of being rolled out.
