Finding this sub randomly a while back has been a pleasant surprise. I have playing around with different things I’ve found on here with the hopes of getting the coveted thumbs all the way up from my kids (so far I’ve only received 3/4 of the way). Despite changing up recipes, I’ve noticed a couple consistent things: 1.) the dough ends up chewy. 2.) the flavor in the crust is usually lacking.

I use bread flour bc we keep a ton at home. I have a home oven at 500° and use baking steel up top and a stone on the lower rack. Usually I put one pie on the steel and move it to the stone if it feels like the crust isn’t quite done but the top is done. Maybe I should try changing the rack positions? Does the yeast/flour brand make a difference? Going to try mixing in some AP on the next round. Either way – here is the latest using the Jim Lahey no knead recipe (first time).
