My partner hates cheese. Except when it is on pizza (I know… ) but he is also very particular about the pizza/cheese. For example… your typical gooey Neapolitan look is out. So far it seems like he likes just a typical light covering of low-skim mozzarella on home bakes, but the thing is he likes other pizzas that I know use a blend. I tried sliced provolone under the mozzarella and it was a borderline no… Any suggestions on getting a little more flavor in there without grossing him out?
