salad ingredients:
fusilli or rotini
chicken cutlets (fully cooled)
mini bocconcini
basil
arugula
1 pint cherry tomatoes
shaved parmesan
base dressing:
1/4 cup olive oil
2 tbsp red wine vinegar
2 tbsp lemon juice
dried basil
dried oregano
salt
pepper
roasted tomato vinaigrette:
1 pint cherry tomatoes (roasted in olive oil with basil)
1/3 cup olive oil
3 tbsp red wine vinegar
1–2 tbsp lemon juice (to taste)
salt
pepper
tips: toss your hot pasta with the base dressing and let it fully cool in the dressing. this step is crucial for having a flavourful pasta salad. salt your salad tomatoes and let them sit in a bowl, then use all the juices in the salad. marinate your bocconcini in lemon and salt and include the marinade when you drop them in. only slice and chop your chicken once it’s fully cooled. don’t add hot chicken into your salad.
optional: finish with a little finely diced red onion that’s been soaked in water and drained, and a squeeze of lemon.
