• 1 cup sugar

• 4 egg whites
• 20–30 ladyfingers
• Unsweetened cocoa powder

👨‍🍳 Instructions:
1. Beat egg whites + sugar on medium speed until stiff peaks form.
2. In another bowl, mix egg yolks, mascarpone, vanilla bean, and coffee liqueur until smooth.
3. Gently fold the whipped egg whites into the mascarpone mixture until fully combined.
4. Mix espresso with a splash of liqueur in a bowl.
5. Dip ladyfingers quickly into the coffee mixture and layer them in a 9×13 pan.
6. Spread half of the mascarpone cream over the layer.
7. Repeat with another layer of dipped ladyfingers and remaining cream.
8. Refrigerate for 3–4 hours (or overnight for best results).
9. Dust generously with cocoa powder before serving.
