Lemony Asparagus Risotto
Recipe:
1 bunch asparagus1 onion (diced)4 tablespoons olive oil, divided3 garlic cloves, rough chopped2 cup arborio rice1/2 cup white wine, optional5-6 cups hot veggie broth (or use hot water with 2 teaspoons veggie bouillion)1/2 cup basil leave1/2 lemon, juice to taste1 teaspoon salt, more to taste1/2 teaspoon pepper
2 tablespoons pecorino cheese
This is a lemony asparagus risotto
To make it Cut your asparagus in to four Discarding the bottoms
Now blanch them in a pot of boiling
water and then keep about 2 cups
of the water for later
Now in a blender blend half
Of your asparagus, with 1/2 a cup of
The water handful of basil
Salt and pepper
And two tablespoons of olive oil.
Now blend it up This is pretty much
a asparagus pesto and you
can use this for pasta on pizza
or anything else you can think of.
For the risotto chop half an onion
And sauté in a large pan with a
teaspoon Of oil, once sweaty
add minced garlic. Now toast
Your rice till it gets a bit of color
Then pour in about a half cup
Of cooking wine Now 1 cup
at a time pour in chicken stock
And some of your asparagus water
Once it starts to thicken up repeat
Do this Until your rice
Is creamy yet slightly Aldente
now during the final pour throw
In the asparagus peices.
Once mostly absorbed
pour in your asparagus pesto sauce
Along with Juice from half a lemon
salt and pepper and pecorino.
And that’s all. Now Stir it up
And let it thicken back up slightly
Now taste to make sure its seasoned

Personally I use shallots over onions in my risotto and I always love to do a mix of pecorino and parmigiano. Try it and let me know what you think!
looks vile, but looks aren't everything i suppose
