Chicken Marsala is one of my favorite dishes… and you are sure to love it! You can serve this dish with pasta, mashed potatoes or rice. The rice I made to accompany our Chicken Marsala is made with my Italian Sofrito and finished with fresh Parsley.
The tangy rich sauce is just amazing and the mushrooms just adds that extra texture that make your palate dance.
The Marsala Wine gives it a distinct taste that your taste buds are just going to love and want more and to add to your taste buds I added a bit of Brandy that just give it that extra flair.

Olive Oil Aceite de Olivo
Cook the chicken breast on both sides and set to the side and start the sauce.

Portobello Mushrooms Hongos Portobello
ยฝ Stick of Butter / ยผ Cup ยฝ Barra de Mantequilla / ยผ Taza
2 Tablespoons of Flour 2 Cucharadas de Harina
ยพ Cup to 1 Cup of White Wine ยพ a 1 Taza de Vino Blanco
ยผ Cup of Brandy ยผ Taza de Brandy
2 Cups of Chicken Stock 2 Taza de Caldo de Pollo
ยพ Marsala Wine or ยฝ Cup of Balsamic vinegar ยพ Taza De Vino Marsala o ยฝ de Vinagre Balsamic
1 Teaspoon of Salt 1 Cucharadita de Sal
Pepper Flakes to taste Hojuelas de pimienta al gusto
Before adding the liquid saute the mushrooms and flour for at least one minute.
Once the sauce comes to a zimmer at the chicken back into the sauce. Add chicken stock as needed. Let it simmer for about 20 minutes and turn off the stove.
*Antes de agregar el lรญquido, saltee los Hongos/champiรฑones y la harina durante al menos un minuto.
Una vez que la salsa hierve a fuego lento, el pollo vuelve a la salsa. Agregue el caldo de pollo segรบn sea necesario. Deje hervir a fuego lento durante unos 20 minutos y apague la estufa.
Parsley Rice – Arroz de Perejil
2 Tablespoons of Olive Oil 2 Cucharadas de Aceite de Olivo
3 Tablespoons of My Italian Sofrito 3 Cucharadas de Mi Sofrito Italiano
3 Cups of Rice 3 Tazas de Arroz
4 Cups of Water 4 Tazas de Agua
1 Tablespoon of Salt 1 Cucharada de Sal
3 Tablespoons of Finely Chopped Parsley 3 cucharadas de perejil finamente picado
Mix the parsley into the rice once the rice is done.
*Mezcle el perejil en el arroz una vez que el arroz estรฉ listo.
