Why add cornflour, you could have used the seeds from the lemon in a muslin cloth, and placed that in with the strawberries, sugar and lemon juice to thicken it, as lemon seeds have pectin which sets the jam, or you could buy pectin powder. I couldn't eat this recipe as I cannot eat anything derived from corn.
